Description
Darwin Honey Glory is one of the proprietary process recipes developed by Right Side Coffee Roasters together with producer Darwin Moreno, with whom they have been working directly since 2016.
This lot comes from El Cielito, Honduras, an area internationally recognized for producing coffees with complex profiles thanks to its microclimate and the adaptation of different varieties in the region.
The Pacas variety, originating from a mutation of Bourbon in El Salvador, adapts especially well to these altitude and climate conditions, developing sweet and structured profiles.
Honey Glory Process:
The Honey Glory recipe, perfected by Darwin since 2018, combines controlled fermentation and slow drying to highlight sweetness and texture:
Selective manual collection
Cherry pulping
Fermentation in tank for approximately 20 hours
Drying on African beds for about 15 days
This process results in a rich and expressive cup with a sweet and creamy profile.
