Description

This decaffeinated coffee is the result of the collective work of around 25 small producers from Santa Maria, Huila, Colombia.

Grown between 1,700 and 2,100 meters above sea level, the lot combines Caturra, Pink Bourbon, Castillo, and Colombia varieties, contributing to a sweet, round, and clean profile.

In the cup, we find caramel and baked apple in the aroma, accompanied by a soft, syrupy sweetness. Red apple remains in the cup along with a delicate acidity, finishing with a clean aftertaste.

Process

The coffee has been decaffeinated using the Ethyl Acetate (Sugarcane/EA) process, utilizing a solvent derived from fermented sugarcane molasses.

This process allows for caffeine extraction while maintaining much of the coffee's inherent sweetness and clarity.
