Dimtu is a coffee from the Dimtu Wate washing station, located in the Hambela district of the Guji region, Ethiopia.

The station receives cherries from approximately 600 small producers spread across different villages in the area, including Buku Sayisa and Dimtu.

At an altitude of 2,150 masl, Wate is one of the highest-altitude stations in Guji and exclusively produces premium G1 quality coffee.

The station was established in 2019 to address the decline in cup quality caused by aging coffee trees in the surrounding areas. During the harvest season, between December and early February, 100 to 150 people from the region work in harvesting.

The coffees received include local varieties such as Wolichu and Kudhume, as well as improved cultivars like 74112 and 74110.

In the cup, Dimtu presents a clean and delicate profile, with notes of apricot, peach, citrus, tea, and jasmine.

Process

This coffee has been processed using the Washed method with a Penagos eco-pulper.

The machine effectively removes mucilage using significantly less water, thus reducing the environmental impact of the process.

Additionally, the system automatically separates unripe beans, helping to produce cleaner and more homogeneous batches.

Efficient mucilage removal also allows for shorter fermentation times, helping to preserve the clarity of the cup profile.
