This batch of El Diviso, the result of the Cata x Nestor Lasso collaboration in Colombia, is an intense and modern expression of advanced fermentation.

The Yellow Papayo variety —rare and highly aromatic— is processed using a Double Anaerobic Natural + Thermal Shock process, designed to enhance sweetness, texture, and tropical complexity.

The cup offers:

🍒 Deep cherry jam finish

The profile is bright and tropical, with a dense, syrupy body that envelops the palate. The acidity is lively and clean, while the finish is exceptionally sweet and persistent.

It works incredibly well both in filter and modern espresso, where its texture and sweetness become even more pronounced.
