El Obraje is a coffee that embodies innovation, risk, and evolution within Colombian coffee.
Produced by Pablo Andrés Guerrero in Nariño, this lot comes from a farm that originally cultivated cereals, not coffee. In 2000, Pablo decided to take a chance on coffee at an unconventional altitude—a decision that today defines one of the most interesting profiles in the region.
Located at 2,200 meters above sea level, this coffee benefits from extreme conditions: significant temperature variations and volcanic soils rich in minerals, which contribute complexity, sweetness, and vibrant acidity.
The result is a clean, bright coffee with a distinctive character.
Process
Processed using the washed method, this coffee prioritizes clarity, structure, and definition in the cup.
Cherries are processed immediately after harvesting on the farm, where they are pulped, fermented in controlled tanks, and carefully washed before drying.
The use of solar dryers and raised beds allows for precise control, ensuring consistency and quality.
