Description

El Paraiso Cardamomo is one of the most advanced expressions of contemporary Colombian coffee. Produced by Diego Samuel Bermúdez at Finca El Paraíso (Cauca), this lot reflects a unique combination of coffee tradition and scientific precision.

Diego has revolutionized processing through controlled fermentations, selection of microorganisms and his distinctive thermal shock technique, where washings with hot and cold water help to fix aromatic compounds, enhancing intensity and clarity.

The Double Anaerobic Washed Thermal Shock process includes:
- Rigorous selection and washing with ozonated water
- 12 hours of initial oxidation to activate enzymatic processes
- Pulping followed by double fermentation (open tank + submerged stage)
- Traditional washing in channels to preserve cleanliness and acidity
- Mechanical drying at 38°C to 10–11.5% moisture
-Cold stabilization to preserve the aromatic profile

The result is a refined, structured and surprisingly expressive cup, where the sweet spice of cardamom blends with the creaminess of pistachio and the softness of sponge cake.
