El Retiro is one of the most exclusive microlots from the Pacas Family, a name that has been linked to Salvadoran coffee for over 150 years and is renowned for giving its name to the Pacas variety. This lot comes from the Sudan Rume variety, part of the "Incunables" line, which brings together the rarest and most complex coffees produced by the family.
Grown at 1,400 meters above sea level in Apaneca, on the fertile slopes of the Santa Ana and Cerro Verde volcanoes, this Sudan Rume benefits from a precise microclimate that enhances its fruity and floral expression. After a natural anaerobic fermentation, the cherries develop an exceptional aromatic intensity.
In the cup, this coffee is vibrant, sweet, and deeply juicy, with layers of kiwi, raspberries, blueberries, red grapes, and an elegant hint of port wine. The acidity is lively yet balanced, supported by a lingering sweetness and a complex finish.
El Retiro is part of the Incunables coffee project, where higher wages are paid during harvest and processing to guarantee exceptional quality and a real commitment to the producing families.
