Description

This coffee is part of Right Side Coffee Roasters' direct dealing project in Nueva Segovia, Nicaragua, an initiative focused on developing unique profiles through direct collaboration with producers at origin.

The lot comes from Finca La Esperanza, located in the Dipilto and Jalapa mountain range, owned by Luis Alberto Balladarez, a renowned Nicaraguan producer who combines his work in coffee with his vocation as a parish priest, promoting the development of his community.

This micro-lot stands out for its SL34 variety, a genetic originating from Africa —especially associated with Kenya and Tanzania— that is rarely found cultivated in Nicaragua.

Process: Natural Mystic

This coffee belongs to the “Natural Mystic” process series, developed by Right Side Coffee in collaboration with producers at origin to explore new sensory profiles.

The process includes:

Fermentation of cherries underwater with different resting phases

Drying whole cherries on African beds under shade

Slow drying for approximately 25 days

This method allows for the development of cleaner, more defined, and more complex flavors within a natural process.
