Description

This Geisha Honey coffee comes from Finca Etiopía, managed by Sigfredo Corado in the Santa Ana region of El Salvador, grown between 1,950 and 2,150 meters above sea level. The farm is located in a privileged environment with rich volcanic soils, high altitude, and 100% shade-grown coffee, preserving both the quality of the coffee and the ecological balance.

The farm employs sustainable practices across all its plots: manual weeding without chemical herbicides, nutritional management based on soil studies, and water conservation systems. Each cherry is hand-picked at its optimal ripeness.

Honey Process

In the honey method, the cherries are partially pulped, leaving mucilage attached to the parchment. The coffee is then slowly dried with this mucilage present, allowing the natural sugars to directly influence the final flavor profile. The drying process requires constant monitoring to prevent unwanted fermentation and achieve a balance between clarity and complexity.

In the cup, this Geisha offers a creamy and enveloping texture, with pronounced sweetness and juicy acidity. Notes of forest fruits, ripe tropical fruit, and stone fruit stand out, accompanied by a subtly floral and elegant background. The finish is long, silky, and refined.
