Hailing from Frinsa Estate in West Java, Indonesia, this lot combines multiple varieties—Bourbon, Andung Sari, Sigarar Utang, and Ateng—grown at 1,400 meters above sea level in an ideal environment for developing complex profiles.
This coffee is part of a new generation of experimental coffees, where fermentation is used as a tool to create unique, intense, and utterly unconventional profiles.
The result is an exotic, structured cup with a very distinct identity.
Process
Processed with a 96-hour extended natural fermentation, this coffee takes fermentation to a deeper level.
During this prolonged period, the cherries remain fermenting before drying, allowing for the development of more complex aromatic compounds and greater intensity in the profile.
Subsequently, drying is carried out in a controlled manner to preserve clarity and avoid defects.
The result is a coffee with great depth, sweetness, and a very elevated aromatic expression.
