Description

The Thiririka Farmers Cooperative Society (FCS) has three factories: Githembe, Kiganjo, and Ndundu. In Githembe, the coffee is only depulped and washed, then transported to Kiganjo for drying. Githembe has around 1,500 active farmers who grow SL 28, SL 34, and Batian. The soil is clay loam. The harvest runs from October to December, and shipping from March to April.
Processing techniques are consistent across all three factories. Cherries are sorted before depulping. After depulping and a 12-14 hour fermentation, the parchment is separated into P1, P2, P3, light P, and floaters categories. The P1 is left in the soaking tank before moving on to drying, which lasts between 7 and 14 days.

In the cup, it stands out for notes of blackberry, rhubarb, and orange.
