Golden Waffle has been returning to DAK for four years, and for good reason. This Ecuadorian Typica makes for an easy-drinking espresso that is sweet yet very clean. Think waffles, maple syrup, and cookies. A coffee we know well and are always happy to have available.
The Crespo family purchased Hacienda Pillcocaja twelve years ago and built the operation with a focus on keeping everything close to the farm. Their wet mill is located just 800 meters away, so the cherries do not travel far before being processed. We have been buying coffee from the family for the last four years, including their natural Typica, Honey Dude. Golden Waffle is the same variety from the same farm, but processed as a honey. Compared side-by-side, it is a great way to see how differently both lots can taste. They share some of the same sweetness, but Golden Waffle is cleaner and more caramel-like, with waffles and maple syrup in the cup.
Ana María Crespo produces this lot at Hacienda Pillcocaja, in Azuay, in the southern highlands of Ecuador. The coffee grows at 1,650 masl, with the wet mill just 800 meters from the farm.
The Honey process consists of pulping the cherries before drying, leaving some of the sticky mucilage around the seed. The coffee is dried with this layer still attached, before removing the remaining dried material. It is a low-intervention approach: a traditional honey process, without additional fermentation stages or other processing steps, keeping the intervention relatively simple.

We select our coffees based on their unique tasting profiles and, of course, being 100% traceable. We partner with importers who share our values and roast each of our coffees carefully to bring out the best flavors they have to offer.
We roast on an IMF machine that provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to develop properly in a shorter time. The result is clean, bright, and sweet coffees.
