Description

Guji Natural is a coffee from the Guji region of Ethiopia, processed at the renowned Danbi Udo Washing Station and selected by Process Coffee.

This region has established itself as one of the most interesting in Ethiopia, offering coffees with balanced, complex, and extremely sweet profiles, highly valued in the specialty coffee sector.

Local producers hand-pick the cherries at their optimal ripeness, and the washing station carefully processes them to preserve quality before export.

This lot is a Grade 1 natural (G1), the highest classification level in Ethiopia, guaranteeing a clean, expressive, and high-quality cup.

Process

The coffee is processed using the natural (dry) method, where the cherries are dried whole on African beds, allowing the fruit's sugars to transfer to the bean.

This process enhances sweet, fruity, and floral profiles, with greater body and complexity.

Process was founded by Ben Hamilton, a seasoned coffee professional and creative entrepreneur based in Belfast, Northern Ireland. With a deep passion for coffee and community, Ben co-founded Guilt Trip in 2017, a renowned coffee and donut shop where he served as general manager for three years.
