Description
Hazel Nuts is the perfect coffee for milk-based drinks, brought to you by our long-standing partners, Marysabel Caballero and Moises Herrera. This natural Catuaí grown in Honduras is round and silky, with notes of hazelnut, cocoa nibs, and blackberry.
Moises began producing naturals about 3 years ago, starting initially with just 30 bags. Drying natural coffees is very difficult in Marcala due to the humid climate and rainfall during the drying period. Moises has worked hard over the years to perfect the process, and in doing so, he has also taught the same techniques to his father-in-law, Fabio. When processing the coffees as naturals, they harvest ripe cherries and dry them on covered raised beds. Initially, the layer of cherry must be thin, and as the coffee dries, the thickness of the layer can be increased. It can take between 20 and 40 days for the cherry to dry, depending on the temperatures. La Pedro is a farm at 1,620 meters above sea level that Marysabel and Moises bought in 1995.

We roast on an IMF machine that provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to develop properly in a shorter time. The result is clean, bright, and sweet coffees.
