This batch, part of our direct dealings with Heleanna Georgalis since 2016, is the result of this producer's inspiration to produce the best possible coffee through her personal learning process. Their dedication to the care of their harvest is such that part of the processes of their batches are a well-kept secret.
Small producers near the town of Gerse sell their cherries to the mill managed by Heleanna where they are processed. The age of the coffee plantations in the area is around 100 years, giving them incredibly strong genetics and becoming the famous Ethiopian heritage, which gives such unique results in the world.

Description
Although Heleanna keeps the details of the process under lock and key, we know that the coffee reaches its mill in the afternoon and is soaked in water to remove possible defects. Subsequently, it is taken to African beds where it remains for about 15 days under strict supervision to achieve the objective: breaking the mold among coffees with a natural process through a unique and delicious cup.
