This Pink Bourbon, produced by Henry Bonilla, combines one of Colombia's most cherished varietals with an advanced process designed to enhance complexity, sweetness, and florals.

Through controlled fermentation with selected yeasts and hibiscus infusion, this lot develops an elegant and vibrant expression, maintaining clarity and structure in the cup.

The result is a sweet, juicy, and highly aromatic coffee.

Process

Processed using Advanced Washed Co-Fermentation with Hibiscus:

Selective harvesting of ripe cherries
Controlled oxidation (24–48h)
Pulping and fermentation in sealed bioreactors (60–72h)
Use of selected yeasts and hibiscus infusion
Thermal shock to stabilize aromas
Controlled drying and stabilization

This process delivers a combination of red fruit, florals, and great sweetness.
