Description

House of Plum is a coffee from the Cusco region of Peru, produced by the Cedrobamba collective, a group of small farmers focused on quality and the development of specialty coffees.

Grown between 1,800 and 2,100 meters above sea level, this coffee thrives in an environment of volcanic soils and cool climate, where afternoon breezes help slow the maturation of the cherries. This natural process favors the development of greater sweetness and depth in the cup.

The cherries are harvested between August and October, at their optimal point of ripeness, ensuring greater uniformity and quality in the batch.

Process

This coffee has been processed using the natural (dry) method, where the cherries are dried whole, allowing the fruit's sugars to transfer to the bean.

The result is a cup with greater body, sweetness, and complexity, with a silky texture and a rounded profile.

In the cup, House of Plum presents notes of black plum, hazelnut, and raisins, accompanied by a wine-gum like sweetness and a soft, enveloping texture.

An especially enjoyable coffee for espresso, but it also works well in other methods for those seeking sweet and deep profiles.
