Hydro Honey is an experimental coffee from Chelbesa, Gedeo (Ethiopia), processed at the renowned Danche Washing Station and roasted by Dak Coffee Roasters.
Grown at 2,300 meters above sea level, this lot of Heirloom varieties reflects the potential of high-altitude Ethiopian coffees, where slow maturation allows for the development of more complex, bright, and defined profiles.
This coffee is a reinterpretation of one of Dak's most iconic profiles, offering an even creamier, more intense, and structured cup than in previous editions.
Process
Hydro Honey combines natural and honey techniques with carefully controlled experimental fermentation.
Cherries are picked at their optimal ripeness and selected by flotation and Brix measurement. They then undergo an initial drying phase on raised beds before fermentation.
The process includes 48 hours of total fermentation:
24 hours aerobic phase
24 hours anaerobic phase
Fermentation tanks are prepared with olive wood smoke and honey residues (sefef), which adds greater aromatic complexity. After fermentation, the coffee is slowly dried for approximately 25 days on African beds.
The result is a vibrant, juicy, and balanced cup with a creamier texture and an intensely expressive profile.
In the cup, Hydro Honey offers notes of mandarin, yellow plum, and grape, with a bright acidity, defined sweetness, and a clean finish.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
