Israel Jamioy is a coffee that combines identity, community, and an incredibly expressive profile.

Hailing from Aponte, Nariño (Colombia), this lot represents a new phase: coffees separated by producer within a region renowned for its quality and unique character.

Grown at 2,150 masl in a high-altitude moorland environment, this coffee develops under extreme conditions that favor slow maturation and a high concentration of sugars.

Israel, in addition to being a producer, is an ambassador for his community, bringing the story of Aponte coffee to Europe and strengthening the connection between origin and consumer.

Process

Processed using the honey method, this coffee retains some of the mucilage during drying, enhancing sweetness, body, and complexity.

This method, adopted by the community since 2017, reduces water usage and allows for the development of sweeter, more structured profiles.

The result is a juicy cup with greater texture and a very expressive aromatic profile.
