Jaime comes from El Prado, Huila (Colombia), where the Casallas family cultivates grapes at 1,560 meters above sea level. Jaime and his son manage a 3-hectare farm in La Bella, where they grow Caturra, Pink Bourbon, and Gesha grapes, working with a constant focus on quality and continuous improvement.
The coffee is processed using the washed method with extended fermentation, which imparts clarity and a defined sweetness to the cup. The combination of altitude, fertile soils, and careful handling allows the subtle flavors to express themselves precisely.
In the cup, Jaime is clean and balanced, with notes of fresh orange peel, soft caramel, and toasted almonds, accompanied by a clear sweetness reminiscent of pear, honey, or melon. It is elegant, structured, and has a lingering finish.
