Panama doesn't just produce exceptional Geishas; amidst this obsession with cups full of clarity and purity, there are much more straightforward and indulgent coffees that remain perfectly balanced. This washed Caturra from Jamison Savage is one of them.
The cup begins with something indulgent: milk chocolate, followed by red plum, with that lively and elegant sensation found in Kenyan coffees. Finally, these notes expand into hazelnut, leaving a smooth and generous mouthfeel. A Caturra that doesn't try to be a Geisha, and that is its best quality. Because Panama can also be a Caturra.
Jamison Savage first made a name for himself with Finca Deborah, located in the highlands of Volcán, Panama. He began working with coffee in the mid-2000s, before developing Finca Deborah in 2008. The farm quickly became one of the most prominent projects in the country. His approach is based on variety, terroir, and processing, focusing on understanding what each can contribute to the final cup. Over the years, Savage has worked with Caturra, Catuai, Bourbon, and Geisha, employing processes ranging from traditional washing to more experimental fermentations and treatments.
For this lot, the washed treatment of the Caturra seeks to highlight the precision and clarity of the coffee, without overly masking its fruit. The result is less demonstrative than a coffee processed through fermentation, but more refined.
