Description
This Red Catuai Natural reveals the most expressive side of the work of Jorge Vasquez and the Roble Negro team, with whom Prolog has collaborated for five years. Jorge, head of the wet mill and their largest cherry supplier, has become a benchmark for quality, traceability, and sustainability in Tarrazú.
Grown at an altitude of between 1,750 and 2,000 meters, the plot benefits from a privileged ecosystem: natural springs, protected forests, and a microclimate that favors clean fermentation and slow, even drying. This environment, combined with the meticulous natural process, results in a funky yet refined coffee, full of character but always balanced.
In the cup, the profile is deep and juicy, with vinous notes, cooked red fruits, and a lingering sweetness reminiscent of toffee. The finish, smooth and warm, evokes toasted almond. A delicious, expressive, yet approachable natural—perfect for both filter and espresso brewing.
