Bourbon Pimienta is one of those rare varieties that doesn't go unnoticed.

Produced by José del Mar Ordóñez in Bella Vista (San Agustín, Colombia), this lot combines uncommon genetics with a technical process that elevates its profile without losing clarity.

Despite its prolonged anaerobic fermentation, this coffee doesn't lean into extreme funkiness — it maintains a surprising elegance, closer to a washed than a natural.

The result is a tropical, clean, and very well-structured coffee, with a silky texture that makes it especially appealing.

Process

Processed as honey with anaerobic fermentation (~90h):

Fermentation in whole cherry before pulping
Fermentation control to avoid aromatic over-extraction
Honey drying while retaining mucilage
Development of sweetness and texture without losing clarity

This approach provides fruit intensity with a clean and defined profile.
