Grown in the fertile mountains of Sinai, Palestine (Huila), this lot comes from the El Casino estate, run by José Elcias Martínez and his wife, Francy Helena Inga. At an altitude of 1,700–1,800 meters above sea level, their dedication and technique have given rise to one of Colombia's most expressive Pink Bourbons.

After years working away from the fields, José returned to his roots to rebuild the family farm. Today, he grows premium varieties such as Caturra, Gesha, Tabi, and Pink Bourbon, combining traditional practices with a genuine commitment to quality and sustainability. José and Francy are also known for their big hearts: they care for several abandoned dogs on their farm, turning it into a vibrant home.

The process is classic, with manual harvesting at its peak, pulping on the same day, and dry fermentation for 30 hours, drying on raised beds. The result is a cup with bright acidity, silky body, and enveloping sweetness that combines the best of Huila with the elegance of Pink Bourbon.
