Juan Danilo Florez represents the new generation of producers in Urrao, one of the most exciting coffee regions in Colombia today.
Grown at over 2000 meters above sea level, this lot of Chiroso reflects the enormous potential of a variety that has captured the attention of the specialty coffee world for its cup quality and exceptional profile.
This is SEY's first year working with Juan Danilo, continuing their exploration of Urrao and their commitment to producers who are taking this variety to new levels.
The result is a bright, floral, and delicately tropical coffee.
Process
Processed using the washed method, focused on clarity and transparency:
Manual harvesting at peak ripeness
Floatation sorting
Resting in bags for up to 2 days
Pulping and underwater fermentation (~5 days)
Drying until 10.5% moisture is reached
This process highlights the varietal complexity of Chiroso and its elegant acidity.
