Juan Peña is one of Ecuador's most renowned producers, and Hacienda La Papaya has become a global benchmark for its scientific approach and obsession with quality.

Cultivated at 2000 meters above sea level in Saraguro (Loja), this lot of Mejorado represents one of the most elegant expressions of this Ecuadorian variety. The combination of extreme altitude, technical management, and precise processing results in a clean, floral, and deeply complex cup.

The result is a bright and refined coffee, with a delicate structure and exceptional clarity.

Process

Processed using the washed method, focused on purity and precision:

Selective picking of ripe cherries
Floatation sorting
Immediate pulping
Submerged fermentation (~15h)
Complete washing
Drying on raised beds (10–18 days)

This process highlights the natural elegance of the Mejorado variety.
