Description
Description
This coffee comes from the Yunguilla Valley, in the province of Azuay, Ecuador, where producer Juan Peña cultivates coffee between 1,400 and 1,700 meters above sea level.
Juan Peña, also known for his work at Hacienda La Papaya, cultivates in this area characterized by its sandy soils and a drier climate than other coffee regions in Ecuador.
This lot belongs to the Sidra variety, a natural cross between Bourbon and Typica, and has been processed using the Natural method.
Drying the whole cherry allows for a greater expression of fruit and sweetness in the cup.
In this coffee we find notes of passion fruit, roasted apple, and red plum, resulting in a fruity and sweet profile.
It is also a limited stock coffee with full traceability.
Process
This coffee has been processed using the Natural method.
The cherries are slowly dried whole, allowing the fruit to remain in contact with the bean throughout the drying process.
This method contributes to developing more fruit and sweetness in the cup, highlighting the characteristics of the Sidra variety.
