This lot, produced in Colombia (Tolima, Huila, and Caldas), is part of the Kaleidoscope collection, a series focused on experimental coffees with extreme and highly expressive profiles.

Developed at origin with local producers and El Vergel Estate, this coffee is not a conventional blend, but an intentional construction of flavors through controlled fermentations.

The result is an experience completely different from what we understand as traditional coffee: sweet, vibrant, and with an almost dessert-like profile.

Process

This coffee undergoes a highly experimental process:

Initial rest in sealed bags for 2 days
Fermentation with yeasts and co-fermentation with fruit (including banana)
Extended fermentation for up to 5 days
Slow sun drying and stabilization in controlled dryers
Resting period of approximately 1 month

This approach allows for the development of extreme aromatic intensity, with a creamy, sweet, and layered profile.
