1) Ethiopia · Sidama · Zero Fermentation Washed
Zero fermentation. Literally.
This Bombe, Sidama lot takes washed coffee to its simplest form. Once the cherries are harvested, they are depulped and the mucilage is removed immediately, without any fermentation stage, before being dried on raised beds in the shade.
It sounds almost suspiciously simple, especially in a world where coffee processing seems to add another step of fermentation every year. But that is exactly what makes this lot interesting.
Without fermentation leading the way, the character of the 74158 variety and its terroir is expressed with remarkable clarity. The cup is bright, delicate, and extremely clean: a fresh green grape sweetness, soft frangipani florals, and a crisp citrus finish.
Sometimes doing less really gives you more.
2) Ecuador · El Alisa · Natural Typica Mejorado
Produced by Leonidas Jaramillo at 1,720 masl, this natural Typica Mejorado displays the elegant and transparent profile that has made Ecuadorian coffees increasingly interesting in recent years.
Typica Mejorado is often recognized for its floral complexity and refined acidity, with a profile that sits somewhere between the classic structure of Typica and the aromatic elegance associated with Geisha.
This El Alisa lot is delicate yet expressive: it opens with soft florals, followed by a ripe peach sweetness and a clean grapefruit-like citrus finish.
Bright, elegant, and very accessible.
