Description


La Catarata is a coffee from Costa Rica produced by the Ureña family at Café Rivense del Chirripó, a family farm located in the Chirripó region, in the south of the country.

The farm was founded in 2005 by Régulo Ureña and Isabel Rojas and has developed a strong focus on quality and sustainable agriculture. Their work has been recognized in competitions such as the Cup of Excellence, where their Vista al Chirripó Caturra Honey lot reached fifth place in 2019.

In the cup, La Catarata stands out for its sweet, juicy, and balanced character. Notes of nectarine and ripe cherry provide a fruity and fresh sensation, while the dark sugar sweetness adds depth. A soft acidity completes the profile along with a pleasant texture.

The farm works with practices aimed at reducing environmental impact. Shade trees naturally help improve the soil and keep the coffee plants cool, while fertilization is based on annual soil analyses. Water sources are also protected, and fruit trees are grown, contributing to the local ecosystem.

The Chirripó region has rapidly become a prominent area within Costa Rican specialty coffee. Its elevations, nutrient-rich volcanic soils, and cool mountain climate create favorable conditions for developing complex and nuanced coffees.

Process

This coffee has been processed using the Honey method.

The cherries are hand-picked when they reach their optimal ripeness and are then processed on the farm itself, ensuring traceability throughout the entire process.

The coffee is dried on raised beds, and the final drying is carried out using mechanical dryers. All processing, selection, and packaging are done on the farm.

The result is a sweet and juicy cup, with soft and balanced acidity and a profile marked by ripe fruit and dark sugar.
