Description
La Guaca is a coffee produced by José Herman Salazar on his family farm Finca La Guaca, located in Pitalito, Huila (Colombia).
This batch stands out for its use of the rare Bourbon Aji variety, an uncommon genetic strain that, despite its name, does not directly belong to the Bourbon family, but rather originates from Ethiopian Landrace. It was discovered on the farm itself almost by accident, when some plants displayed an exceptional sensory profile compared to the rest of the crop.
From that moment on, the Salazar family decided to focus on this variety and on specialty coffee, consolidating a project that today reflects years of dedication to quality and detail.

This approach allows for complete control over every stage of the coffee process.
Process
The coffee is processed using the washed method, with a focus on precision and consistency. The cherries are selectively harvested, soaked in water to remove defects, and then pulped without water.
The coffee ferments in sealed tanks for 36 to 50 hours, allowing it to develop greater complexity without sacrificing purity. After washing, it is dried for approximately 18 days in covered structures or solar dryers, with conditions adjusted according to the weather.
In the cup, La Guaca presents a clean, refined and very expressive profile, with notes of citrus, white flowers and a characteristic panela-type sweetness, offering an elegant and distinctive experience.
