This microlot comes from La Providencia, Huila (Colombia), cultivated by Fabián Acevedo, a fourth generation producer who combines family tradition with contemporary technical precision.

The Papayo variety is a rare natural mutation of Coffea arabica, recognized for its unique genetics and expressive cup profile. Its elongated, orange cherries give this uncommon variety its name in Colombia.

The Washed Anaerobic process includes:
Hand-selected cherries at peak ripeness
24 hours of controlled oxidation in plastic bags
48 hours of fermentation in stainless steel tanks
Drying in a canopy for 15 days under gentle airflow

The result is a sweet and exuberant cup, with a juicy texture and bright red fruit acidity. Layers of honeyed citrus and delicate florals unfold, culminating in a clean and lingering finish.

A batch that reflects precision, sensitivity and one of the most fascinating varieties in Colombia.
