This microlot comes from Finca La Riviera, in Risaralda, Colombia, produced by Julio Quiceno in collaboration with Café Uba.

The Sudan Rume variety, of Ethiopian-Sudanese lineage, is extremely rare and renowned for its distinctive aromatic profile. At La Riviera, it has been cultivated for over 11 years at altitudes between 1400 and 1700 meters above sea level, on young soils rich in organic matter.

The Advanced Washed process incorporates a bioreactor fermentation, where the cherries are inoculated with Kazachstania humilis yeast under strictly controlled conditions:
24 hours of pre-fermentation
36 hours of fermentation after pulping
Temperature control (22–24°C), pH (3.6–3.9) and pressure (3 bar)
Nitrogen enrichment
Dry in a dehumidifier until optimal humidity

The result is an exceptionally clean, sweet, and well-defined cup. It features a pronounced citrus-herbal aromatic structure and a layered, clear yellow fruit acidity.
