Description
Description
Las Flores is one of the most representative coffees of the new generation of Colombian specialty coffee.
Produced by Jhoan Vergara in Acevedo (Huila), this lot combines family tradition with radical innovation in fermentation. From the farm's beginnings in the 90s to winning international competitions, evolution has been constant.
The turning point came in 2019 when Jhoan won the Master of Coffee with his Pink Bourbon, positioning the farm globally.
Today, Las Flores is synonymous with precision, experimentation, and exceptional quality.
The result is a vibrant, complex, and multi-layered coffee.
Process
Processed using anaerobic washed with must, one of the most advanced methods:
Selective harvesting of ripe cherries
Controlled anaerobic fermentation
Use of must (fermented mucilage) to intensify the profile
Washing to maintain clarity
Drying and stabilization to fix complexity
This process generates an extremely dynamic and structured profile.

About Sumo Coffee Roasters
Sumo Coffee Roasters' mission is to create a transparent and ethical coffee business that highlights and celebrates everyone involved, from the producers and farmers who pour their heart and sweat into the craft to the baristas who create the finished product, and everyone in between.
Our goal is to ensure direct trade and that we pay a fair price to the farmers.
By helping educate consumers about the farmers' craft, by telling the story behind the bean, and by doing our best to achieve perfection in our roast, Sumo's plan is to elevate the standards and experience for all involved in the industry, innovating the way forward for coffee.
Sumo Coffee Roasters was founded in summer 2020 by 2019 World Cup Tasters Champion Daniel Horbat and his partner, Alexandra.
