Description

This Pink Bourbon, produced by Linarco Rodriguez in Huila, reflects the potential of one of Colombia's most prestigious regions for specialty coffee.

Cultivated at 2000 meters above sea level within a community of producers committed to quality and sustainability, this lot combines controlled anaerobic fermentation with slow drying to develop a clean, sweet, and nuanced cup.

The result is a bright and structured coffee, where fruit and sweetness are elegantly integrated.

Process

Processed using Anaerobic Washed:

Selective harvesting of ripe cherries
Floatation and manual sorting
Anaerobic fermentation (~32h) in sealed tanks
Full washing
Slow drying on raised beds (~25 days)
