Cultivated at 2000 meters above sea level within a community of producers committed to quality and sustainability, this lot combines controlled anaerobic fermentation with slow drying to develop a clean, sweet, and nuanced cup.
The result is a bright and structured coffee, where fruit and sweetness are elegantly integrated.
Process
Processed using Anaerobic Washed:
Selective harvesting of ripe cherries
Floatation and manual sorting
Anaerobic fermentation (~32h) in sealed tanks
Full washing
Slow drying on raised beds (~25 days)
Stabilization before milling
This process contributes complexity and sweetness while maintaining clarity in the cup.
