Lollipop is one of those coffees that completely breaks from tradition. Hailing from Finca Zarza in Colombia, this lot uses the exclusive Wush Wush variety alongside an advanced double anaerobic fermentation and washed process.
Grown at 1,800 meters above sea level, this coffee takes experimentation to the next level, resulting in an extremely sweet, expressive, and unconventional profile.
The result is a cup that literally evokes candy: intense, fruity, and with a playful character that makes it unforgettable.
This type of coffee represents the new generation of specialty coffee — innovative processes, unique profiles, and completely different sensory experiences.
Process
This coffee undergoes a double anaerobic fermentation process, followed by washing, which allows for the development of great aromatic intensity without sacrificing cleanliness in the cup.
During anaerobic fermentation, the cherries are processed in an oxygen-free environment, boosting the production of complex aromatic compounds. Repeating this process further intensifies the sweet and fruity flavors.
The subsequent washing provides clarity and structure, balancing the explosion of flavors.
The result is a clean yet extremely expressive profile, with a very pronounced sweetness.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
