Bourbon Pimienta from Los Nogales is no ordinary coffee. It's an experience.
Following the success of its natural version (2nd place in WCiGS24), this washed lot takes the variety to another level, displaying a clarity and precision uncommon in such complex profiles.
Produced by Oscar Hernández in Huila, this coffee reflects the distinctive signature of Los Nogales: intense, defined, and instantly recognizable profiles.
The result is a vibrant coffee, with lemonade-like acidity, tropical layers, and a long, elegant finish.
Process
Processed using advanced experimental washed methods, with multiple stages:
Rigorous selection of ripe cherries
Brief pasteurization (80°C, 20s) to activate sugars
Pulping with juice recovery
Prolonged fermentation (~5 days) with yeast
Controlled mechanical drying (8–12 days)
Stabilization in GrainPro (15–30 days)
This process allows for maximum clarity with high complexity.
