Hailing from the historic Los Nogales farm in Pitalito (Huila, Colombia), this lot combines tradition, innovation, and precision to offer a coffee with all the complexity of specialty coffee — but with low caffeine content.

Produced by the Hernández family, this coffee reflects decades of experience and a vision focused on quality, sustainability, and innovation.

The result is a bright, clean, and surprisingly expressive cup, far from the typical flat profile of decaffeinated coffees.

Process

This coffee undergoes an advanced process that combines fermentation and natural decaffeination:

Rigorous selection of ripe cherries
Density sorting after disinfection
Opening of the bean with hot water (~80°C)
Decaffeination using EA (Ethyl Acetate) derived from coffee pulp
Removal of ~95% of caffeine while preserving aromas

Subsequently, a controlled 96-hour fermentation is carried out with a sourdough starter from previous batches at 18°C, which enriches the aromatic profile.

The result is a clean, complex, and characterful coffee.
