Produced by Mario Gonzales in Dipilto (Nueva Segovia), this lot comes from a farm transformed from scratch in less than a decade, moving from forest production to high-level specialty coffee.
Located near the Honduran border, the farm benefits from a natural microclimate with shade and biodiversity that enhances the quality of the fruit.
The result is a modern coffee with pronounced sweetness and well-integrated complexity.
Process
Processed using carbonic maceration natural, this coffee develops greater aromatic intensity:
Selective harvesting of ripe cherries
Fermentation in sealed, oxygen-free tanks
CO₂ generation initiates internal fruit fermentation
Drying on raised beds under shade
Temperature control to prevent undesirable fermentations
This process provides greater body, sweetness, and deep fruity notes.
