Lychee Candy is a coffee that proves that fermentation can be precise and elegant.
Produced by the Vélez family at Finca La Luisa (Antioquia), this lot stands out for its technical approach to fermentation, where each stage is designed to enhance the profile without losing clarity.
Unlike other more aggressive co-ferments, here the use of lychee is perfectly integrated into the process, adding character without dominating the cup.
The result is a floral, juicy coffee with a very well-balanced complexity.
Process
Processed using double carbonic maceration + lychee, with high technical control:
First fermentation in cherry (~5 days) in an oxygen-free environment
Extraction of the generated must
Pulping and second fermentation (~3 days) with must + lychee
Controlled drying (~5 days) for stabilization
This process allows for complexity to develop without over-fermentation.
