This lot of Castillo uses controlled fermentations with yeasts and an advanced processing protocol designed to enhance yellow fruits and intense sweetness without losing clarity.
The result is a tropical, clean, and very elegant cup.

Processed using Washed Yeast Fermentation (Yellow Fruits):
Selective harvesting of ripe cherries
Ozone disinfection
Submerged anaerobic fermentation (~36h)
Cultivation of specific microorganisms from mucilage and pulp
Additional fermentation under pressure (~12h)
Thermal shock to fix aromatic compounds
Controlled drying by dehumidification
This process brings aromatic intensity and great definition in the cup.
