Description
This Maragesha coffee from Wilder Lazo originates in the El Jardín village (San Adolfo, Huila), within the family project La Dinastía, where each member participates in the drying, processing, and grading. After a fire forced them to abandon the farm, the family returned to rebuild it from scratch, driven by a determination that is now reflected in precise, clean, and technically impeccable coffees.
The cherries are selected at 20° Brix, floated, hand-sorted, and then subjected to a 120-hour anaerobic washed process, with pH control at 4.3 and a maximum temperature of 14°C. They are then washed, dried for 8–15 days, and rested for 20 days in GrainPro to stabilize the profile.
The result is a bright, floral, and juicy coffee, where notes of jasmine, apple, and nectarine combine with sweet layers of caramel and milk chocolate, plus subtle hints of blueberries and grapes. Sophisticated yet approachable: an elegant and expressive filter.
