The coffee is fermented in a bioreactor, where it is combined with fruit must (in this case, watermelon), starter cultures, and culture leachate. The oxygen inside the bioreactor is replaced with nitrogen. Throughout this process, temperature, pH, and Brix levels are carefully monitored.
The parameters of these fermentations are established through ongoing research and are maintained within a specific range of values.
After fermentation and the removal of mucilage, the coffee beans undergo a careful drying process. They are first sun-dried for 20 days, absorbing the natural essence of the sun. They then undergo a five-day mechanical drying process to precisely adjust the moisture content.
This combination of drying methods helps preserve the delicate flavors and aromas of the beans.

We have a co-fermented coffee with melon from Finca Milán! For those who enjoy co-fermented coffees, this one is delicious, more subtle and refined than our previous "Melondo," but just as flavorful. In the cup, we find notes of watermelon, kiwi, and cantaloupe. For this reason, an "omniroast" label will appear on your box.

We select our coffees based on their unique cupping profiles and, of course, that they are 100% traceable. We partner with importers who share our values and carefully roast each of our coffees to deliver the best flavors they have to offer.
We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
