Monteblanco Mango is coffee in extreme mode.
Produced by Rodrigo Sánchez at Finca Monteblanco (Huila), this lot is one of the most radical examples of experimental fermentation in Colombia. Using real fruit (mango) and a mix of selected yeasts, the result is an intensely tropical and highly aromatic profile.
Located at 1,730 meters above sea level, this coffee takes advantage of one of the country's most privileged microclimates, leading to vibrant and complex profiles.
This is not a traditional coffee—it's an experience.
Process
Processed through natural co-fermentation with mango, this coffee follows an advanced protocol:
Selection of cherries with high sugar content (Brix)
Mixing with yeasts (lactobacillus, saccharomyces, cerevisiae)
Addition of mango and natural sugars to feed fermentation
Extended fermentation (~180h) in a sealed environment
Subsequent washing
Drying on parabolic beds (25–30 days)
This process creates an intense, creamy, and very expressive profile.
