Description
Description
Nahun Fernández is one of the most interesting names in Honduran coffee today.
A multiple Cup of Excellence award-winning producer, Nahun has elevated the Parainema variety — one of the country's most representative — to exceptional quality levels.
Grown in Santa Bárbara, near Lake Yojoa, this coffee benefits from a unique microclimate with constant fog that slows down the maturation of the fruit, generating greater density and complexity.
The result is a sweet, well-rounded coffee with great fruit expression.
Process
Processed using the honey method, this coffee enhances sweetness and texture:
Selection and flotation of ripe cherries
Pulping while retaining mucilage
Drying on raised beds
Humidity control to prevent over-fermentation
This process contributes to a creamier profile with more body.
