This exceptional Sudan Rume comes from El Diviso, the innovative project of Néstor Lasso, Adrián Lasso, and Jhoan Vergara in Pitalito, Huila.

Cultivated at 1850 masl, this lot combines one of the world's rarest varieties with the advanced Natural Anaerobic Thermal Shock process, developed after years of research and experimentation in fermentation.

The result is a vibrant and extraordinarily complex cup, where intense fruit and delicate florals are expressed with great clarity.

Process

Processed using Natural Anaerobic Thermal Shock:

Manual selection of ripe cherries and flotation
Controlled oxidation (~40h)
Anaerobic fermentation (~40h)
Submerged fermentation with must recirculation (~28h)
Thermal Shock (65–70°C) to stabilize the profile
Controlled drying in stainless steel dehumidifiers
Stabilization in GrainPro bags
