Description
This Nindo Ndaje comes from the Mazatec region of Oaxaca, where indigenous communities cultivate coffee using entirely biodynamic methods, without external fertilizers or pesticides. Each fertilizer is handmade, enriched with natural nutrients that strengthen the soil and the biodiversity of the surrounding environment.
The project is driven by Marchantia, led by biologist David Akle Cantú, who works closely with producers to improve soil nutrition, shade management, ecosystem vitality, and resilience to coffee rust. His technical support, along with advance payments to farmers, enables sustainable and fair production.
After harvesting, the cherries are cleaned, left to rest overnight, pulped, and washed again before drying for 10 to 20 days. The result is a smooth, structured, and versatile coffee, perfect for those seeking a sweet, balanced, and uncomplicated profile: praline, hints of orange, and a honeyed finish with light acidity.
