Produced by Wilton Benítez at Granja Paraíso 92 (Cauca), this lot has been used in multiple Brewers Cup competitions, establishing itself as one of the most refined profiles in modern Colombian coffee.

Crafted with extreme precision at every stage, this coffee stands out for its crystalline sweetness, vibrant acidity, and a complexity that evolves with each sip.

The result is a bright, elegant coffee with a long, unforgettable finish.

Process

Processed using double fermentation + thermal shock washed, with a scientific approach:

Selection and sterilization (ozonated water + UV)
Thermal treatment (~70°C)
Cherry fermentation (~72h with yeast)
Pulping and second fermentation
Thermal shock (hot/cold) to set aromas
Controlled drying in stages (40°C → 35°C)

This process allows for precise and extremely clean aromatic expression.
