Description

This lot from Paola Trujillo stands out for working with one of the most historic coffee varieties: Typica. Grown between 1570 and 1650 meters above sea level in Colombia, this coffee expresses the classic elegance of the variety with exceptional clarity and sweetness.

Typica, although less productive and more vulnerable than modern hybrids, is valued for its clean, sweet, and structured profile, especially when grown at altitude.

At Patio Bonito, the coffee cherries are hand-picked at their peak ripeness. After flotation and manual sorting, the coffee undergoes a 22-hour anaerobic fermentation following the Cofinet protocol to enhance sweetness and complexity. After pulping and washing, an additional 18-hour fermentation takes place. Finally, drying is carried out on raised African beds under strict supervision until an ideal moisture content of 9.5–11% is reached.

The result is a refined and vibrant cup, where the citric acidity is balanced with a caramelized sweetness and a clean, structured background.
