Papayo is one of the most exciting varieties emerging from Colombia.
Grown by Juan David Chinchilla in La Cumbre (Huila), this lot stands out due to both its origin and its uncommon genetics. The Papayo variety, related to Ethiopian landraces, offers a bright, tropical, and extremely clean profile.
Cultivated between 1,700 and 2,000 meters above sea level, this coffee reflects Juan David's commitment to quality: careful selection, clean processes, and a sustainable vision that protects the farm's natural environment.
The result is a vibrant, modern coffee with a unique identity.
Process
Processed using an anaerobic natural method, this coffee enhances sweetness and complexity:
Selective harvesting of ripe cherries
Fermentation in an oxygen-free environment
Development of intense aromatic compounds
Controlled drying to preserve structure
This process results in a juicy texture and a highly fruity profile.
